    Description

Nutmeg is a spice and is derived from the seeds of the tree of nutmeg. It has a nice, strong and pervasive smell and almost an intense sweet taste. In ancient times, it was used as incense. During the 16th century nutmeg gained a great importance because it was a rare and expensive spice. Dutch merchants were planning even destruction of plantations in Indonesia in order to keep the price high. After harvesting the fruits of the nutmeg, the seeds are removed and dried in the sun for about 1.5 months. Then, the dry shell is broken and the kernel is gathered. Nutmeg are round, have gray colour and their surface is wrinkled. They contain essential oils in an amount of about 10 %. Nutmeg is used in confectionery, in baking and in cooking.
